Black Bean Brownies
This vegetarian dessert recipe can be made vegan and chocolate-free by choosing the appropriate substitute ingredients.
INGREDIENTS:
- 1/2 cup cocoa or carob powder
- 1/2 cup butter or margarine or applesauce
- 1/4 cup stevia or 2 cups sucanat or brown sugar
- 2 cups cooked black bean puree, or 2 cans
- 2 eggs or 1/4 cup prune puree or 1 cup ground flaxseed mixed with boiling water
- 2/3 cup flour (optional; less flour = more gooey)
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- chopped nuts (optional)
TOPPING:
Optional: Flowers made by arranging dried apricots slices in spokes, with chocolate chips, cranberries or raisins in the centre.
PREPARATION:
Mix cocoa, butter, sugar, black bean puree and eggs together in a bowl until well blended. Sift dry ingredients together and stir into wet mixture. Grease a 9 x13 inch pan with cooking spray and pour the batter into the pan. Bake 30 minutes at 350 degrees or until slightly done. Don't overbake.
